Ginger Spice Cookies
“Christmas will soon be here and for me that means it’s time to bake the cookies! Over the years, I have collected what I think are some really good cookie recipes. Molasses cookies were not one of them until I came upon this delicious Ginger Spice cookie recipe. With all these warm spices, this cookie takes its place deliciously on my Christmas Cookie plate and is very well received! I hope you will try it.”

Ingredients
- 2 1/3 cup Flour
- 2 teaspoons Baking Soda
- 1/4 teaspoon Salt
- 2 teaspoons ground Ginger
- 1 teaspoon Cinnamon
- 1/2 teaspoon Allspice
- 1/4 teaspoon Cloves
- 1/8 teaspoon freshly ground Black Pepper
- 3/4 cup of unsalted Butter, at room temperature
- 1/4 cup plus 2 tablespoons White Sugar
- 1/4 cup plus 2 tablespoons Light Brown Sugar, packed
- 1 Egg
- 1/3 cup Molasses
- 1/2 cup Turbinado Sugar, for rolling cookies
Method
- In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, allspice, cloves and black pepper.
- In the bowl of an electric mixer, beat the butter, white sugar and brown sugar until light and fluffy, about 2 minutes. Beat in the egg and molasses.
- Add the flour mixture and mix just until combined.
- Chill the dough for several hours.
- Heat oven to 350 degrees F, set racks in center of oven, and line baking sheets with parchment paper.
- Form tablespoons of dough into balls and roll in the turbinado sugar to coat. Arrange balls about 2 1/2″ apart on baking sheets.
- Bake 8-9 minutes. They will look soft on the top but brown on the bottom quickly.
- Let them set a couple minutes on baking sheet before transferring to wire rack to cool.
Tips
- Be generous when rolling the balls in the turbinado sugar. It gives the cookie a pretty sparkle and crunch.
- In order to have a nice assortment of cookies and keep them tasting fresh, I freeze them just as soon as they are cooled in separate containers with couple sheets of wax paper between the layers. Label the container. When I am ready to gift a pretty tin of cookies, or serve them, I get them all out of the freezer and take a few from each container.
