Oatmeal Pancakes
“If you love pancakes, here is a delicious, filling and healthy recipe to enjoy. The recipe is for one serving so scale up for however many you are serving. I make these on Sunday mornings. Enjoy these without any guilt!”

Ingredients
- 1/2 cup Old Fashioned Oats
- 1 Egg
- 1 Ripe Banana
- 1/4 cup Skim Milk
- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon
Method
- Put egg, skim milk, baking powder and cinnamon in blender and give it a good spin.
- Cut banana in chunks and add that and the oatmeal to the mix. Again, give it a good whirl to break it all down.
Tips
I fry these in Pam and use sugar free syrup.

I made these for breakfast this morning! Thought I’d share my cheats in case it helps others. 1) I literally just dumped all ingredients in my shake blender and blended for a few seconds. 2) I poured the batter into my microwave egg cooker. This thing is the BEST. Lol. I microwave eggs all the time. 😬 It cooks for 1:30 in my microwave. 3) I added vanilla to one and gave it to my picky eating son with some cinnamon sugar sprinkled on top. 4) I added PB2 to one to try without syrup. 5) the third one I had with pure grade A maple sugar. They were all great! And it was super easy to make!!!

This is a great, easy, hearty, DELICIOUS pancake recipe. Pancakes are not my typical quick go-to breakfast choice. Since I had one overripe banana, I figured I would give it a try.
This recipe is so easy. I followed the recipe as written mixing the ingredients with my Nutribullet. It came together so quickly. I made four small pancakes. They cooked swiftly using a small non-stick skillet and Pam cooking spray.
This is a very filling recipe. I had a side of fruit with my pancakes and was only able to eat half the stack. I reheated the remaining pancakes in the microwave the next day for 30 seconds. They reheated very well. The next day I replaced the side of fruit with a slice of bacon. Pancakes, bacon, and pure maple syrup – YUM!
Did I mention these are delicious? They are very fluffy and very tasty. The hint of cinnamon and sweetness of banana are perfect together.

Tried ‘Mom’s’ pancakes this morning! They are very good, especially if you like bananas and oats!! Since I don’t have a blender, I tried simulating that part of it, but would’ve been better with a blender!! 😊.
Added a few dark cherries as well….
